Virtual Pizza Academy Takes the Main Stage at Pizza Expo with Tony Gemignani and Eddie Stalewski

Virtual Pizza Academy is heading to Las Vegas for one of the most meaningful moments in our journey yet.

On Tuesday, March 24 from 2:00–3:00 PM, VPA Co-Founder Jim Henry will take the Main Demo Stage at Pizza Expo for a free, one-of-a-kind live demo alongside two of the most respected names in pizza: Tony Gemignani, a 13-time World Pizza Champion, and Eddie Stalewski of Eddie’s Pizza 412, fresh off his win at the Real Calfornia Pizza Competion

The demo will take place at Pizza Expo in the Las Vegas Convention Center, right in the heart of the show floor, and is open to all Expo attendees.

Three Pizzaioli. Three Signature Pan Styles.

This collaborative demo will focus on three distinct signature pan styles, with each pizzaiolo showcasing a pan pizza that represents their individual approach, technique, and philosophy.

Rather than a single recipe or style, attendees will get a side-by-side look at how different pan pizzas are developed—from dough formulation and pan selection to bake strategy, structure, and finished results. It’s a rare opportunity to see how elite pizza minds think about pan pizza through very different lenses, all on one stage.

A Milestone Moment for VPA

For Jim Henry, sharing the stage with Tony Gemignani represents more than just a demo—it’s a full-circle moment.

“Sharing the stage with Tony is a major milestone in my pizza journey,” said Henry. “Like so many people in this industry, I’ve followed his career for many years. To be able to collaborate, learn, and exchange ideas in front of a live audience at Pizza Expo is something I don’t take lightly. This demo is about respecting where pan pizza has been, while pushing it forward through technique and education.”

Eddie Stalewski brings a third perspective rooted creativity and execution—showing how his creative pan pizza techniques transform into works of art.
