1. Make Poolish 12–18 hours prior to making dough.
2. When making dough, mix until all ingredients are incorporated, cover and rest 20 minutes.
3. Remove dough from bowl to a well oiled surface.
4. Fold the dough over on itself 5–6 times, cover and let rise for 40 minutes, or until dough is puffy.
5. Divide dough according to the desired pizza size.
6. If doing a pan pizza, place the dough into a well oiled pan and press out to the edges, cover and let rise for 1 hour. Then bake.
7. If making thin round pizza, ball the dough, cover and let rise for 1 hour. Then press the dough out to the desired size and bake.
