What is cupped pepperoni?
Cupped pepperoni is pepperoni that curls upward into a cup shape as it bakes instead of lying flat. It happens for two reasons: the pepperoni is stuffed in a natural casing, and it is sliced thick enough to hold its shape. As the meat heats, the casing tightens and pulls the edges up while the center stays put. The result is a crisp rim, a pool of spiced fat in the middle, and a lot more flavor per bite.
Why this pepperoni cups and grocery store pepperoni does not
Most supermarket pepperoni is sliced paper thin from a large diameter stick with no natural casing. It has nothing to pull against, so it lies flat and dries out. Urban Slicer uses a smaller diameter stick in a natural casing, cut at the right thickness, which is exactly what cup and char requires.

How to use it
Lay the slices flat on your pizza before baking, leaving a little space between them so the edges can lift. Bake at your normal pizza temperature. For maximum char, place the pepperoni on top of the cheese rather than under it. It is also excellent on charcuterie boards, in stromboli and calzones, on flatbreads, and chopped into pasta.
Is it spicy?
It brings noticeable heat but it is not a punishing hot pepperoni. Think warm and well spiced rather than fiery. Most people who enjoy a standard pepperoni pizza have no trouble with it.
